The science, in one minute. The colour of beef comes from myoglobin, a natural protein in the muscle. Myoglobin changes colour depending on how much oxygen reaches it. Inside a vacuum pack, there is, by design, no air at all — so the myoglobin rests in its deep, dark, purplish state. That darkness isn't decay; it's proof the seal did its job.
Watch it bloom. Open the pack, pat the meat dry, and give it 15–30 minutes in the open air. As oxygen returns, the surface "blooms" back to the vivid red you know. Butchers call this the bloom, and watching a deep garnet rib‑eye brighten on the board is one of the quiet pleasures of buying meat the traditional way.
When to pause. Trust your senses alongside the science. Set the meat aside and don't cook or eat it if:
- the colour doesn't return after a good while in the open air, or
- you see grey or green tones, or
- The surface feels slimy or sticky, or there's a sour smell that doesn't fade after a few minutes of air (more on smell here).
